Summer season is the perfect time to enjoy refreshing vegetables and fruits specially cucumbers and melons. Smoothies are one of the best and healthier way to enjoy them. Here i am writing a simple cucumber and mint smoothie recipe which will give you a definite cooling effect in summers. Mint cooling effect stimulates the senses and improves the mood.
Ingredients
- 3 Cucumbers
- Handful of fresh Mint leaves
- 1/2 cup yoghurt
- Juice of one lemon
- Salt as per taste
Recipe
Wash, peel(optionally) and cut cucumber in small pieces. Wash mint leaves under running tap water. Grind cucumber, lemon juice and mint leaves in grinder to prepare smooth paste. Add paste and salt in yoghurt and mix well. Put in refrigerator and serve cold.
The outer skin of the cucumber contains a lot of fiber, along with silica to assist in strengthening bones, ligaments. blood vessels. Cucumber skin is also good source of magnesium and potassium.
